I often get asked for alternatives for the classic 'sandwich or wrap' at lunchtime. The answer is - it takes time to evolve, don't try and do everything at once. Maybe try something different twice a week, to begin with. This option was fairly easy as I had done some prep on Sunday. I made the butterbean humous in my mini Kenwood mixer. I also use IKEA's glass lunchboxes to avoid plastic exposure.
The rest was easy:

Chuck two pierced sweet potatoes in the oven while it was on for dinner (about 20 mins)

Slice some red cabbage on my mandolin

Throw in some organic rocket and some shredded cabbage.

Chop a few organic cherry toms and bung them in.

Add the 'now cooled' sweet potatoes, a BIG dollop of the humous and a handful of seeds.
Butterbean humous:

Organic butterbeans (drained)
